Cottage Cheese Pancakes


Sounds pretty weird, right? Well, don’t knock it ’til you try it. I have very fond memories of making these with my dad and sister when I was a youngster, and eating them as an adult brings back those warm fuzzies. Anyway, they’re easy to make, and while they have a pretty unique taste, they don’t really taste like cottage cheese. Here are the ingredients:

1 cup cottage cheese
2 eggs
1/2 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 Tbsp sugar
1 Tbsp oil

Mix those all together in any order you’d like, then warm up a frying pan or griddle at medium-high heat. They’re meant to be quite small (about the size of a coaster once they’re cooked), so only spoon out a couple of tablespoons per pancake. Cook them like you’d cook any other pancake.

One final note: It’s our tradition that these special pancakes are eaten with sugar, not with syrup. Also, you have to eat them with your hands. The only silverware allowed is the spoon used to sprinkle sugar on top. Enjoy!
