Quick, Easy (and Oh So Yummy) Brownies

BrowniesI’ve had quite the sweet tooth lately. Josh and I made a recent agreement that I’m not allowed to purchase any pre-made sweets. If I want dessert, I have to make it from scratch. I’m not sure how this agreement came about and what the rationale for it is. It was Josh’s idea.

I made a batch of brownies the other week following a recipe on the back of a box of unsweetened baking chocolate, and it turned out terrible. The other night, I tried to find a different brownie recipe online and came across the “Best Brownies” recipe on Allrecipes.

Yummerific!

It turned out so delicious, and it was so easy! I love it when I can bake quickly and without leaving a huge mess. Here’s the recipe (I didn’t make the frosting that came with the recipe, so I’m leaving that out):

INGREDIENTS

1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
2. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
3. Bake in preheated oven for 25 to 30 minutes. Do not overcook.

I frosted it with chocolate whipped cream frosting that I threw together myself (beat 1 cup heavy whipping cream, 1/4 cup or so cocoa powder, and some sugar or Splenda together in a chilled mixing bowl until the right consistency).
